Halloumi & Veg Skewers for the Braai
Share
The vegetarians at the braai usually get a raw deal: a sad salad and everyone else's sympathy. Not today.
Halloumi was born for the grid. It goes golden and squeaky on the outside, soft inside, and with charred veg and a squeeze of lemon it steals the show from the chops.
What you need
- 310g halloumi, cut into big cubes
- 2 baby marrows, cut into thick slices
- 1 red and 1 yellow pepper, cut into chunks
- 1 red onion, cut into wedges
- Olive oil, lemon, dried oregano
- Wooden skewers, soaked in water for 30 minutes
How to make it
- Thread the halloumi and veg onto the soaked skewers, alternating as you go.
- Brush everything with olive oil and dust with oregano.
- Braai over medium coals for 8 to 10 minutes, turning gently, until the halloumi is golden with proper char marks.
- Squeeze lemon over the skewers as they come off.
- Serve as a main for the vegetarians or a side for everyone. Either way, make extra.
