Grass-fed beef tends to be lower in calories since it has less fat. It has also been shown to have higher levels of Omega 3 fatty acids compared to grain-fed beef which has many health benefits. Choosing either grain or grass-fed beef comes down to personal preference for taste and ideals.
Grass Fed Organic Beef Broth 1l - Braeside
Beef Broth is a golden brown liquid with thin layer of fat which gels when cooled. It has a hearty beef flavour and adds umami to food when cooked with. Add to soups, stews, curries, risottos and gravy. Can be enjoyed on its own warmed up with seasoning. Slow cooked for 24 hours. We use 100% grass-fed(pasture raised) beef bones. Free from antibiotics and growth hormones. We use preservative and GMO free unfiltered apple cider vinegar. Beef chuck is a forequarter cut that is best known for chisa nyama or braai meat. It sits bottom of the neck animal where a collar would fit. This is also where you will find the start of the sirloin which is also called “rib eye”. As a hard working muscle it is ideal for low n slow cooking and our deboned 2kg whole trimmed chuck is perfect for smoking or slow roasting at 130C for 6 hours. However as South Africans we love our braais and a chuck steak when cut on the bone is best recognised as the unmistakable forequarter cut with lots of different muscles in one slice. Beef & Pork Tinderbox Farm | Grass Fed Free Range
Our business entity name, Tinderbox Farm is a direct translation of Tonteldoos, a charming village on Mpumalanga’s Highlands Meander, upon which our farm, Geluk is positioned at an altitude higher than 1 800 m. Since 2005, we have grown veld grazed cattle on mountain veld grass and highland stream water with as little intervention as possible. Free range pigs were introduced in 2019 and pasture raised poultry and eggs in 2021. We farm with the health of the land, the animal and consumer in mind. Due to the high altitude and cold night temperatures, cattle in our area are less prone to sickness and require little medication. We administer no growth hormones or steroids and only use antibiotics or other medication if required to prevent suffering and/or to save an animal’s life. Cattle are free to roam extensively and with an altitude variation on the farm of 300m, get plenty of exercise and grow slowly, developing tasty, marbled beef. Our cattle are veld grazed. Some might see that as grass fed or pasture reared, but our cattle are not FED by us. They feed themselves, wandering the mountain slopes, each choosing to eat what they want to of the grasses and other plants growing there, and their bodies develop at a pace nature intended.

We have 2 burgers to choose from – NAKED and RETRO. NAKED contains nothing but a selection of primal cuts from the shoulder, leg and flank. You need to add salt as soon as the burger hits the pan as there are NO additives – no salt, pepper, spices, gluten, rusks, bulkers, binders, allergens, etc. We mince these finest cuts twice for a coarse, meaty patty. RETRO is our nod to yester-year when burgers had the classic “steakhouse taste”. To achieve this we add garlic powder, salt, pepper, paprika and other herbs and spices. Not recommend for anyone with allergies as there is a minute trace of gluten in the garlic powder. Lamb Mince - Braeside
Our lambs are exceptional coming from free range & grass fed meat. Our lambs come from terrain where the grasses are sweet resulting in a creamy sweeter taste. We believe that mince is NOT the dumping site for whatever is left over. We carefully select lamb neck, flank and the joints between the legs and shoulders which are then minced x 2 to give a medium grind 80/20 (meat to fat ratio). We do not use the old butchers trick of adding ice to bulk up the mince. We also do not ever use any colourants, shelf extenders or other chemicals that keep the mince red. The result is that our mince turns a dark red to light brown as the meat oxidizes but when cooked you get to eat what you bought without the extra water and fat that ends up down the drain.

The cut we use is called “tunnel deboning” which means that the bone is removed without cutting through the leg in a so called “butterfly” cut. The centre gland is removed and the leg is then tied and netted. The legs average 2 – 2.2kgs once deboned and netted. Once roasted, remember to remove the net first and the string used to hold the leg in shape.
